I know my Super Bowl posts are a bit late, but I’ve had them all ready to go since the big game last week. That being said, being a proxy Cowboys fan by virtue of my husband’s loyal devotion, I’m very happy the Saints pulled it out. What an exciting game that was!
I loved this dip with some lovely crusty bread and Panettinis!
Ingredients:
- 1/2 cup diced red onion
- 2 cloves garlic
- 1 Tbsp butter
- 10 oz. fresh spinach, chopped and cleaned
- 1 8 oz. package of cream cheese
- 4 oz. of sour cream
- 1 cup grated fresh parmagianno regianno
- salt and freshly ground pepper
Directions:
Melt butter in a skillet over medium heat.
Saute onion until soft, about 5 minutes. Add the minced garlic and cook for another 4 minutes.
Add spinach and cover pan with a tightly fitting lid to wilt the spinach.
Add cream cheese and stir until melted. Stir in sour cream and cheese. Season to taste.
